Kiteboard might make sense. Definitely not symmetrical.
Its not a ramp, the pieces are just sitting in the wrong order. It looks like someone cut their rocker profile on 3 pieces of 2x10 lumber, then attached plywood to the cut edges of both sets of pieces. Whatever was put between the plywood sheets, then, could be clamped with the 2x lumber acting as strongbacks.

Camping down south last week at a beach, couldn't help myself. Had to take photos of what someone left half-burnt in a fire pit. I know its a rocker table. Or a press. Or both. But for what? Too much for a skim. It was maybe 4.5' long... paipo? Weird kneeboard? Something for sand or snow? And what was pressed together in it - thin plies of wood, wood & foam, balsa & linoleum...? I love mysteries. There's something here in the simplicity from which I think we can learn. Compsand application, with no vac, no weight, no electricity? And why did they take it to the beach & try to burn the evidence?

You can always remove the stringer. Easy peasy there, just run a handsaw along it, true up the foam, and glue it back together without.
2.5# is good core for veneers - not 'real' balsa (or other wood) skins, but 1/32" wood veneers, like Surftech. I've done 'em before and they come out stiff, but light & strong. And at under 8', you have a lot of choices.
Tips - hand lam your shaped blank first (3 or 4 oz cloth) to stop the epoxy draining and so its tough enough that if the veneer cracks it won't affect the blank. Use LOTS of veneer softener. Do one side at a time. Make relief cuts in your veneer and be ready to patch anyway. You probably won't even need outer glass.
Definitely won't need perimeter stringers or rail wood.
